Contemporary Asian Cuisine
Named after ancient Japanese drums said to beat with a mythic rhythm, it is chef Schilo Van Coevorden’s Asian-inspired restaurant situated within the hotel. With a live Taiko player beating harmonious rhythms during weekends, Schilo’s explosive yet delicate Asian flavours are matched with a beautiful backdrop.
Taiko 5 Year
For Taiko’s fifth year anniversary, Schilo will take it’s guests on the journey he has taken to become the chef he is right now, celebrating the sources of his inspiration. Throughout the year, various four-hands dining experiences in collaboration with international chefs invited by Schilo will celebrate this special milestone.
On 3 and 4 November, Schilo will welcome Albert Adrià in Taiko, the genius behind the highly acclaimed, Michelin starred restaurant ‘PAKTA’, cooking with us.

What first started as a playful flirt between kitchen and bar, inspired by a shared love and passion for Asia, has now grown into a new phenomenon within the last five years: Taiko Bar. With excellent service from some of Amsterdam’s best bartenders, supreme bites from Taiko Cuisine and a cocktail menu that makes you feel like you’re in a speakeasy in Roppongi, Taiko Bar translates the sophisticated nightlife of global cities such as Bangkok, Tokyo and Shanghai into the intimate, cosy setting of an Amsterdam neighbourhood pub.
About Chef Schilo van Coevorden
In his hometown Amsterdam, Schilo carries the Taiko Cuisine & Bar concept where he positions Contemporary Asian Cuisine on the gastronomic map.
The style of his food and menu has evolved through the years, adapting many different cuisines from all over the world but always based on classic and often simple preparations showing great respect to the pureness of fresh, local and seasonal products.
Working with local suppliers and farmers he has developed his own unique style that captivates the heart and taste buds of many well-traveled food aficionados.
Schilo has a solid culinary & creative base, an impressive background in opening culinary attractions which have all become very successful and ‘places to be’ for the local clientele. Schilo has an immaculate eye for detail, great interpersonal relationship skills both with guests and those that are working for him.
